Rum Bundt Cake with Coconut and Lime


I believe January is conspiring against me.  There are so many things to enjoy about it … the calm after the frenetic holiday season, dark cozy evenings reading piles of books by the fire (or better yet: Gilmore Girls marathons in front of the TV)  and college basketball come to mind.  But the Polar Vortex and all this ice and snow?   Really, must it be quite so cold and messy? Honestly, I live in Virginia, not Maine.  Virginia is technically a southern state.  My pipes shouldn’t be freezing…

This gloomy weather is  making my New Year’s Resolution to eat healthier so very difficult.  I just want to dig into hearty comfort food to warm up – rich cheesy pastas and stews have been calling my name.  And when it’s 11 degrees outside, I want to bake all day long.  It helps keep the kitchen warm.

So, in order to warm up my mood, I’ve concocted a fabulous bundt cake with tropical flavors like lime and coconut and rum.  It helps me envision palm trees and beaches and warm island breezes…

This month, the theme is coconut.  Of course, I felt a need to add rum to my creation… and some lime juice and lime zest.  Tropical indeed!

Rum Bundt Cake with Coconut and Lime


  • 2 1/2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups granulated sugar
  • zest of 3 medium limes
  • 1 cup unsalted butter, softened
  • 1/4 cup lime juice
  • ¼ dark rum
  • 1/2 cup coconut rum
  • 3 eggs
  • 1 cup sour cream
  • 1 ½ cups sweetened flaked coconut
  • powdered sugar, for dusting


Preheat oven to 350 degrees. Grease and flour a 10-inch bundt pan and set aside.

In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

In the bowl of a stand mixer, fitted with a paddle attachment cream together the butter, sugar and lime zest and sugar mixture until light and fluffy – four or five minutes

Add the lime juice and rum. Mix until incorporated.  Next, add the eggs one at a time, beating after each addition, then add the sour cream, and mix until combined.

Add the flour mixture and mix until combined… then fold in the coconut.

Spread the batter into your prepared bundt pan and bake in a preheated oven for 50 minutes or until a tester inserted in the middle of the cake comes out clean.

Cool in the pan 15 minutes then turn out onto a wire rack to cool completely.
